Paleo: Week I.

Since I couldn’t go to the store before class, I’m starting this with dinner. Here’s what I had:

  • boiled asparagus
  • sauteed veggies: red & green bell peppers, cremini mushrooms, asparagus, onions, broccoli and cauliflower
  • 6 oz. portion of baked salmon

I’m starting to think that this might not be so bad after all! I might not miss grains and dairy as much as I thought I would.

Anyway, here’s what I have prepared for the rest of the week:

  • 6 oz. portions of baked salmon (same as above)
  • mini egg frittatas consisting of: spinach, red & green bell peppers, onions, and whole eggs
  • sauteed veggies (same as above)
  • boiled asparagus
  • boiled broccoli & cauliflower
  • sauteed ground turkey with mushrooms & onions

I’m actually super excited to try a bunch of different combinations! Will be updating & photo-logging my journey!
